SLBBQ HONEY CITRUS CURED HAM

INGREDIENTS

- 1 quart hot water

- 3/4 cup kosher salt

- 2 cups brown sugar

- 3 tablespoons pink cure salt

- 2.5 cups orange juice

- 2.5 quarts cold water

- 3.5 tablespoons honey powder

- 2 tablespoons Southern Links BBQ All Purpose Dry Rub

METHOD  

1. COMBINE ALL HOT WATER, SALT, HONEY, DRY RUB AND PINK SALT, DISSOLVE

2. ADD ORANGE JUICE AND COLD WATER  

3. INJECT INTO HAMS  

4. COVER HAMS IN BRINE FOR 14 DAYS  

5. DREDGE HAMS IN EQUAL PARTS DRY RUB AND BROWN SUGAR 

6. SMOKE AT 225 UNTIL INTERNAL TEMP OF 155
