DOUBLE SMOKED HONEY BRULEED HAM

INGREDIENTS

3/4 cup light brown sugar

1/2 cup each: sugar in the raw, granulated sugar & honey powder

1/2 tablespoon each: cinnamon & paprika

1/2 teaspoon each: ground nutmeg, clove & ginger

1/8 teaspoon ground allspice

METHOD

1. Cold smoke spiral sliced ham for 1 hour with pecan wood pellets

2. Lightly mist ham with apple juice

3. Heavily coat ham with spice blend from above

4. Allow ham to rest for 5 minutes

5. Evenly carmelize ham with blowtorch or Searzall.
